fish tacos

You wont’ believe how fast, tasty and healthy these are.  You can do this with about any fish.  Fresh catch- lucky you!

Grill boneless filleted fish wrapped loosely in foil- squeeze a little lime or lemon, sprinkle salt and pepper  and maybe a bit of taco seasoning.   Wrap 6 corn tortillas in foil and place on the grill away from direct heat.  Turn frequently.  If you like a little char on the tortilla- throw on the flames last minute.   Make a bowl of pico de gallo.  Mix some sour cream with fresh lime juice or get out the ranch dressing.  Assemble hot tortilla, cabbage, fish, cheese, pico de gallo, a squeeze of lime and enjoy.

You can offer shredded cheese, sour cream, shredded cabbage, pico de gallo and hot sauce.  This will serve one or two so plan accordingly.

  • 2 fish fillets
  • shredded cabbage
  • pico de gallo
  • shredded cheese
  • corn tortillas
  • sour cream
  • fresh limes
  • hot sauce
