Frozen Coconut Yogurt

2 eggs

1/2 cup whole milk

1 can organic coconut milk

1 T. coconut extract

1 cup whole plain yogurt

1/2 cup sugar or agave

2 T. tapioca flour

Toasted coconut flakes to top

Mix and freeze in ice cream maker according to manufacturers instructions.

Freeze in plastic container- 4 hours to overnight.  serve with toasted coconut flakes.  (just heat coconut flakes in a dry skillet until they begin to brown.  Stir frequently.)
