Pancakes with apples or bananas

Or mangos or peaches or any fruit you like!  You can use ANY pancake recipe- box or scratch but I love these buttermilk pancakes for the best fruit pancakes. 

Put all ingredients in a large bowl- except fruit, and blend lightly just until everything is mixed.  Over- mixing makes for chewy pancakes.  We want them light and fluffy.

  •  1 1/2 cup flour
  • 2 t. baking powder
  • 1 T. sugar
  • 1/2 tsp. salt
  • 1 egg
  • 1 1/2 c milk
  • 2 T. melted butter
  • cinnamon to taste

Sift or mix dry ingredients.  You can add egg yolk, milk and butter next and beat the egg white til stiff peaks and add last.  I usually just add the egg, milk, butter.  Don’t stir too much- just lightly until no dry ingredients.  Stir in cinnamon and fruit chunks.  Heat griddle hot and butter or spray with non-stick.  Bake until bubbles pop on top- and brown edges around each pancake.  Flip, give it another couple minutes and serve warm with butter, fruit, fruit syrup or maple syrup.  Make plenty…
