Sourdough crackers

Another winner using sourdough discard.

1 cup white wheat flour

1/2 tsp sea salt

1 cup sourdough discard

1/4 cup butter

2 T. dried herbs

Oil and kosher salt for the tops.

Mix all the ingredients.  Divide the dough in half.  Wrap in saran and chill at least an hour- or overnight.  Flour some parchment paper on a flat surface.  Roll out 1/16 inch thick.  Cut with a pizza cutter- diamond or square or rectangles- your choice.  Brush with some oil and sprinkle with kosher salt.  Prick with a fork.  Bake 10 minutes at 400 degrees.

To make a cheese cracker add 1/2 cup of your favorite shredded dry cheese and sprinkle some on top.  Experiment with herbs and cheeses until you find your favorite!
