Sourdough Pita Breads

Mix your dough:

2 cups whole wheat flour (or white wheat)

1 tsp. sugar

1/2 tsp. salt

1/2 cup fresh fed sourdough starter

1 T. olive oil

3/4 to 1 cup warm water

Make a soft elastic dough in your Kitchen Aid mixer.  Rise to double size (2 hours).  Punch down.  Make lemon size balls and roll out to 1/4 inch thick.  Rest under damp tea towel for 15 minutes.  Cook on hot lightly oiled griddle- turning within a minute and cooking the second side another minute.
