Zucchini stew

This is such a summer treat- but you can put it together anytime.  When the garden is producing, slice a couple zucchinis in a soup pan, add “whatever you’ve got” and a large can of tomatoes.  Add some fresh basil or dried italian spices, salt, pepper and simmer.  Whatever you’ve got can include celery, onions, fresh peppers- hot and regular, cherry tomatoes and garlic.  I add a soda size can of V-8 juice.  Simmer until vegies are tender, about 20 minutes

fresh is best!

.  Serve in soup bowls with parmessan cheese on top and some crusty bread.

  • fresh zucchini
  • canned tomatos
  • fresh tomatos
  • v-8 juice or tomato juice
  • celery, onion, peppers
  • basil, oregano, salt, pepper
  • parmessan cheese
