7 Layer Dip

If you are looking for a quick addition to a tailgate party or any summer picnic- think about making a 7 layer dip.  Of course, I start with homemade refried beans- but you can buy a couple large cans of Rosarito or your favorite brand instead.  And you can get an disposable aluminum pan so you don’t need to worry about dishes or taking home your pan. 

Start by layering beans about 1 inch thick (or more…) in the bottom of the pan.  For an adult group, add a bit of heat to the beans- some salsa is good.  Then using a spatula, cover the beans with sour cream.  Then sprinkle shredded cheese over the sour cream.  Now slices of ripe avocado, sliced black olives, jalapeno slices, green onion slices and diced tomatoes.  You can be creative and make a football field or a persons name or just have fun with it.  Keep chilled until serving and bring lots of sliced vegies and chips.    For those of you counting- we did exceed 7 layers!  That way if you don’t like something- leave it off.  Garnish with fresh cilantro leaves.

  • refried beans
  • sour cream
  • shredded cheese
  • ripe avocados- about 2
  • black olives- sliced, half cup
  • green onions, sliced, half cup
  • cherry tomatoes halved or diced tomato- half cup
  • jalapeno slices- fresh or pickled, according to crowds taste.
  • cilantro as a garnish
