FANTASTIC on tacos, burritos or with fresh chips. Great over fish, chicken, steak. Wonderful with carne asada or quesadillas.
Just find a confortable spot and assemble your ingredients- tomatoes, tomatillos, carrots, jalapenos, green onions, cilantro. Chop into small 1/4 inch cubes. When done, squeeze fresh lime juice and add a shake of salt. Stir and serve. The fresher, the better. You can omit tomatillos and carrots and still have a real good pico de gallo.
Add chunks of avodado for a full salad- wonderful as a side dish.

OMG…I didn’t realize you had posted these recipes. I’m am excited to make your chicken noodle soup!! It’s been a long while, but sometime in the near future, I’d like to have a day of nothing but cooking and wine with you. 🙂
