There are so many good banana bread recipes. We really got into making it this summer when we got a free huge box of large dark bananas. I take my ripe bananas and throw them in the freezer. They turn dark- but when you peel them for a shake or banana bread- the banana is just fine. You don’t need a mixer, but if you have one, use it.
Mix the margarine and sugar until creamy. Add eggs and bananas and mix again until creamy. Add flour, salt, baking soda and mix until everything is blended. Pour into a greased loaf pan and bake 50 to 60 minutes at 350 degrees.
Try to cool before serving.
- 1/2 cup butter or margarine
- 1 cup sugar (can use brown)
- 2 eggs
- 2 mashed bananas
- 2 cups flour
- 1/2 tsp salt
- 1/2 tsp baking soda
