Greek Salad

When you get tired of the cost of the wonderful Greek salads, learn to make your own!  Not so hard and you will be able to tweak it like you like it.

Wash and shred romaine lettuce.  Slice ripe tomatos, cucumber chunks, kalamata olives (oh, find the ones marinating in red wine), feta cheese, red onion slices and a pepperocino or other pickled hot pepper.  Make a dressing out of 1/3 part olive oil, 1 tsp. fresh or dried oregano, 2/3 parts red wine vinegar, a bit of salt and fresh ground pepper.   We like to set up all matching salads and let everyone shake and pour their dressing at the last moment.

  • romaine lettuce- 1 head per salad
  • feta cheese, red onion, cucumber, tomato
  • kalamata olives and pepperocinis
  • italian dressing or your own oil and vinegar mix
  • grilled chicken breast- optional (marinate in same salad dressing and cook on a grill pan or grill for 5 minutes per side, slice and serve hot or cold on your salad
