Sea Foam Icing

I actually had a special outlet designed in my kitchen just so I could make this icing.  If you don’t have an outlet where you can plug in the mixer next to the stove- find an extension cord.  I’ve done that too. You need a double boiler or you’ll have to rig up something similar.  A double boiler lets you cook something above the water bath.  It’s usually a 2 part pan and Revere makes a nice one.  Before the double boiler, I would float a smaller pan in a bigger pan.  You’re cooking egg white over boiling water and mixing at the same time so it doesn’t set.  Only the brave dare apply!  What were these cooks thinking?

So we take 3 egg whites  and 2 cups of brown sugar (packed lightly) with 1/3 cup water and a dash of salt and place in top of double boiler- with the water boiling.  Beat til it’s fluffy.  This is a cousin of 7 minute frosting just to give you a clue.  7 minutes later or when you notice you have the best looking pan of marshmallow fluff you have ever seen- add  a teaspoon of vanilla and beat that in for 2 minutes.

Frost your cake and stand back to admire!   Thanks mom.

  • 3 egg whites
  • 2 cups brown sugar lightly packed
  • 1//3 cup water
  • dash salt
  • 1 tsp vanilla
