Cajun Potatoes

This is an easy side dish for french fry lovers.  I take a few russet potatoes, wash them, prick them with a fork, and microwave on high for 6 minutes.  Remove and cool.  Slice them anywhere from 1/4 inch to 1/2 inch slices.  Heat a thin layer of olive oil in a flat frying pan.  Place the potatoes in the oil and sprinkle with cajun spice mix.  Cook for at least 5 minutes and flip over.  Sprinkle again with Cajun spice.  Serve hot with ketchup mixed with a little Tabasco.
