Mix your dressing ingredients in a food processor. I love my Cuisinart.
1 cup yogurt
1/4 cup fresh dill
2 T. lemon juice
1 clove garlic
salt and pepper to taste. If you happen to have flavored salts, this is a great time to use some. Add about 1/2 tsp. for this amount of yogurt. Taste test and add more as needed.
Slice cucumbers- with or without skins. Younger cucumbers and Japanese cucumbers don’t need to be peeled.
This can be served immediately or let it sit an hour for best flavor.
