Cherry Rolls

You can make these any flavor you desire. I add a spread of citrus flavored cream cheese under the fruit to Kick it Up a notch.

Start with a nice sweet dough.

1 pkg dry yeast
1/4 cup warm water
Proof or mix and let bubble. Use your KitchenAid mixer with dough hook to make this job easier.

Add 1/2 cup warm low fat milk
Mix in 3 large eggs at room temp
Add 1/2 cup sugar
Add 1 1/2 tsp. salt
Mix in 4 cups of flour
Add a stick of softened butter
Add up to 1 1/2 cups more flour to make a nice soft dough.

Let dough rest 10 minutes, Then Knead for 5 minutes. Cover in large bowl and let rise 2 to 2 1/2 hours.

This makes 2 cherry braids or you can make cinnamon buns or something else with half.

To do the cherry roll, take half the dough and roll out into a large oval. Mix 4-6 ounces of cream cheese with some citrus zest, a tablespoon of lemon or lime juice and a tablespoon of milk or cream. Spread evenly down the middle of the oval. Pour 2 cups of fruit filling over the cheese and slice the sides every inch at an angle. Then braid the bread sealing with a little milk along the way. Let rise in a warm place until double. Bake at 375 for about 20 minutes. You can add a little drizzle of powdered sugar glaze once it’s cool. Wrap and give it away quick.
