pineapple carrot cake

This one comes from my mom and I have yet to try it. But the Bundt Cake pan is a good one for large family gatherings. Mix all together:

2 1/4 cups cake flour
1 1.2 cups sugar
3/4 cup mayo or Miracle Whip
2 tsp baking soda
1/2 tsp salt
1/2 tsp allspice or ginger
3 eggs
1 can (8 oz) crushed pineapple with juice (or one cup from a bigger can)
2 cups finely shredded carrot
3/4 cup chopped toasted nuts

You can use the bundt pan or 2 round pans. Mix all ingredients except carrots and nuts for 3 minutes on meduim. Add carrots and nuts and bake 35 minutes at 350 degrees. Cool 10 minutes and then remove from pan. COVER with cream cheese frosting….
